ZUCCHINI PASTA WITH AVOCADO, BASIL SAUCE

Raw, vegan, vegetarian
Ingredients
- 3 small or 2 larger zucchini (ends cut and pealed with vegetable peeler into fettuccine shape *skin on or off)
- SAUCE
- 1 avocado (peeled)
- handful of cashews
- 1/4 lemon (start with little bit and taste if you like it, do not pour all juice in once)
- handful of fresh basil
- 1 clove crushed garlic (garlic heart taken away)
- pinch of salt, pepper and chilli to decorate
Instructions
- Your pasta is ready - very easy done with vegetable peeler (everyone have it at home) but if you want to invest money to new kitchen helper "spiralizer is a great/ fun thing to have.
- All ingredients for sauce put to the food processor except tasting ingredients (lemon juice, salt pepper) Those you add slowly and taste always when you mix it.
- Mix until nice and creamy or if you like a texture, let it spin just for a couple minutes and you ready to serve.
- Combine zucchini pasta and sauce together well and serve. Sprinkle with fresh or dry chilli.
